Traditional production techniques of Tong Ren Tang Ejiao

同仁堂阿胶传统制作技艺,一是选用上等、整张驴皮。二是采用传统古法炮制工艺,包括熬胶技艺、打沫技艺、收胶技艺、闷晾技艺、擦胶技艺。熬胶技艺是指按传统常压补水熬胶,保留胶液的技艺;收胶技艺是指凭借药工丰富经验,通过观察“挂旗”等传统工艺判断收胶火候的技艺;闷晾技艺是指按传统“三闷三晾”方式晾胶的技艺;擦胶技艺是指按传统技艺对阿胶进行反复擦拭的技艺。

The traditional production techniques of Tong Ren Tang Ejiao insists on using premium and full piece of donkey skins as the raw materials, and strictly adopts the ancient preparation processes that include stewing, foaming, collection, drying and wiping. In particular, stewing is the traditional process of stewing the donkey skin with water under regular pressure to preserve the gelatin; collection is the traditional process that relies on the extensive experience of production workers to determine the timing of collection based on the thickness of gelatin; drying is the process of drying the gelatin with the tradition method of “smoldering and hanging for three times”; and wiping is the traditional process of wiping the Ejiao for multiple times.
